As you think about the many steps and decisions that go into converting an agave seedling into a copita of mezcal, it is a single match that starts the transformation from plant into spirit.

 

 
 

Tobalá

This joven mezcal is un-aged and crystal clear. On the nose, pronounced aromas of ripe fruit, bell pepper, honey, wet stone and smoldering campfire.

The palate is lively with rounded notes of cooked agave, caramelized pineapple and fresh herbs that give way to a subtle smoky-smooth finish and a full mouth-feel.

Roasted for 5-8 days in underground pits before a ten-day to two week fermentation. Double distilled.

TOBALÁ Penca

Brilliant amber in color, the nose unveils layers of complexity. Leading with young leather, caramel and spices, the complex aroma profile shows hints at white flowers and lemongrass.

On the palate, this special expression showcases an explosion of floral notes followed by toasted nuts and mellow smoky undertones. This unique Tobalá Penca expression leaves a wonderful lingering, full mouth-feel. 

Roasted for 5-8 days in underground pits before a ten-day to two week fermentation. Double distilled before 1-3 month aging in glass vessels with agave penca leaf.
