POBLANO OLD FASHIONED

Far from an outlandish idea, Phil Ward’s Oaxacan Old Fashioned is a bona fide modern classic cocktail which also replaces whiskey with agave spirits. With its depth and nuance, our Tobalá is particularly well-suited to playing whiskey’s part, while its tropical vibrance and Poblano heritage is highlighted with a whisper of fruit and the cacao of mole.
2 oz Fósforo Tobalá
.25 oz Pineapple syrup
tsp. Creme de Cacao (Tempus Fugit)
1 dash orange bitters
3 dashes mole bitters
Combine ingredients in mixing glass. Add ice, and stir. Serve over a big cube in a rocks glass, and garnish with a thick orange twist.
